I’m always looking for new snacks to cook for Sprout, especially things for her lunchbox. We have a growing list of favourites and Healthy Little Foodies’ carrot stars are near the top! Sprout absolutely loves them and I make a big double batch at least once a month.
The recipe only uses four ingredients and is pretty adaptable. You can add all sorts of other veggies, I often use a bit of courgette or very finely chopped pepper and my friend Pam has used parsnip too. I also used to reduce the amount of cheese when Sprout was tiny and they still worked great. I must admit that I’ve never cut mine into star shapes, but they would make great party food cut into all sorts of shapes. I mix up double the recipe, spread it all out on a non stick mat on top of a baking tray and bake. When it’s cool I chop the whole lot into little bite size squares.
